Another successful day!

Well I made it through Day 2 successfully. I don't know why this is such a big deal, because I have been on this journey for a long time and have had many successful days so really I'm just going back to the norm. But it seems like a big deal because I've had so many "starting over" days/weeks in the past few months where I have failed to make it through even one day. So, I'm proud for these past two days and the decisions that I have made.

I'm coming up to a challenging weekend. Of course, weekends are always challenging for me. We eat out alot at my house, especially on Friday nights and Saturdays. Its so easy after a long week at work to just grab take out on a Friday night which we do OFTEN. When I'm on track with my healthy eating, I make Friday nights Subway night. That way its quick and easy and still allows me to give in to the eating out habit. But, its within my plan. So, I am going to try to reinstate Subway Friday nights at our house. However, this Friday the husband and I are moving the daughter back to college. That means we will be leaving the house around 6:30 in the morning to beat the check in lines and find parking. I will prepare and pack a healthy breakfast sandwich, to take care of starting the am off right. But Heather has asked us to take her to Chicos (one of her favorite local college hangouts) for lunch and we have agreed. That means some planning is in order so I don't derail myself from my plan.

So, the plan for now is to go online and check out the Chicos menu and nutrition info (hopefully its available) and try to see some good options ahead of time to be prepared. Then, I will just need to keep myself in check when the chips and salsa arrive! Wish me luck....

I went back and updated yesterday's post to include my dinner and dessert. I made an AWESOME Turkey Taco Salad for dinner last night. Here's what I did... I browned some ground turkey breast and added a packet of taco seasoning to it. I made a salad of lettuce, grape tomatoes, black olives and tossed it with some dressing. For my dressing I used Lite Ranch mixed with a little red wine vinegar to thin it. I find that when I'm measuring my dressing, its easier to thin it and then pour it over the lettuce alone first to coat the lettuce really well. Then add the rest of the toppings. To that mixture I added 5 oz. of the ground turkey w/ the seasoning, some WW shredded Mexican cheese and some salsa. I allowed myself 8 Multigrain Tostito chips to scoop it up and it was really good. I eat alot of turkey products when I'm on my plan. I use the ground turkey for tacos, burritos and salads, or make patties with it for burgers on or off the bun. I also like Turkey Italian sausage. There are alot of meal ideas that I will eventually get around to sharing..

Here's how I did today:

Breakfast:
1 whole egg (2 pts, 70 calories)
Light Multigrain English Muffin (1 pt, 100 calories)
1 Turkey Sausage patty (1 pt, 60 calories)

Lunch:
1 High Fiber/Low Carb Ole Wrap (1 pt, 71 calories)
3 oz. ground turkey breast (2 pts, 90 calories)
Taco Seasoning (1 pt, 20 calories)
1/4 cup salsa (0 pts, 20 calories)
Handful shredded lettuce (0 pts, 10 calories)
1/4 cup Fat Free sour cream (1 pt, 60 calories)

I packed the ingredients separately to bring to the office. I know the 1/4 cup salsa and sour cream sounds like alot and I wound up using around 1/2 of the sour cream but I know that if I counted for the full portion I packed, that at least I didn't undercount for points/calories. I had also packed a banana but the taco was so filling, I didn't need to eat it so I'll save it for an afternoon snack.

Afternoon snack: 1 cup baby carrots (0 pts, 70 calories) & 1 individual cont. lite ranch dip ( 3 pts, 100 calories)

Dinner:
1 roasted chicken drumstick (3 pts, 140 calories)
1/2 cup couscous (2 pts, 110 calories)
6 asparagus spears (1 pt, 25 calories)
Just 4 One Peas/Corn (1 pt, 80 calories)

Dessert: Yoplait Delite Lemon Torte (2 pts, 100 calories) & 1 banana (2 pts, 129 calories)
This was the first time I tried the Yoplait Delites which are technically yogurt I think but taste like pudding. The Lemon tasted like the filling of a lemon meringue pie.

Totals for the day: 23 points, 1,255 calories, 84.5 oz. water
