Whew! What a morning I have had. I have been so busy with work that I have just now (when its about 45 minutes until quitting time) had time to sit down and catch up my online stuff. Isn't it funny how we now have to fit another whole new set of tasks into our daily routine due to technology? I have to allot time in my day for reading and returning emails, checking my social networking sites, reading blogs, updating my blog, checking my favorite web sites, etc. It takes some time and makes me wonder what I did with the time BEFORE the internet??
Anyhow, this is my catching up the weekend post since I don't usually get online during the weekends. Reading my Thursday post, you will see that I had somewhat of a challenging weekend coming and I'm proud to say that I met that challenge head on and successfully stuck to my plan!
Friday was a challenge for me because the husband and I were moving our daughter back to college. Heather had requested that we take her to her favorite Mexican restaurant across campus for lunch. I relunctantly agreed because it was her day. I had looked up the menu online a few days before but unfortunately there was no nutrition information available. This immediately had me worried because I'm all or nothing with my diet and I feel like I'm cheating when I can't count my points. But, we went anyway and although I didn't count the points, I feel like I did well. That morning I had made myself a breakfast sandwich for the road as we were leaving really early. I made an egg and slice of 2% cheese on a multigrain english muffin for 4 points and 215 calories. I attempted to eat it while unloading the car and therefore didn't finish the whole thing. For lunch we went to the Mexican restaurant and I was awesome at saying no to the chip basket, allowing myself only ONE..yes I said it, only ONE chip with salsa and it didn't really even bother me. Then I ordered the combination plate which was 2 chicken soft tacos with rice and beans. I told the waitress to please leave the cheese off my tacos and the beans off my plate. Somehow this was translated to bring me an extra order of rice instead of beans so my plate arrived with 2 tacos and 2 heaping helpings of rice. The tacos were bigger than I had anticipated so I ate one whole taco with lettuce, tomatoe and salsa. Then I ate one bite of chicken out of the other taco and one of the helpings of rice. So, like I said, I felt a bit off because I couldn't accurately count the points, but I think I did well. In the past I would've probably said heck with it and just cheated for the day. Then I went home that night and had a small dinner of 1 roasted chicken drumstick, 1 cup carrots and 1/2 cup of corn/lima beans for a total meal of 7 points and 400 calories.
Saturday and Sunday could've been a challenge as well. It was just the husband and I which usually means lunch out or a big meal cooked at home. I didn't give in to temptation though! My weekends always throw me off of my routine and thus off of my eating and water drinking schedule. More about the water in a minute. But for the eating, during the week I get up about the same time, get ready for work and head out the door around 9:00 either eating my breakfast right before I go or in the car on the way..that puts breakfast around 8:45-9:15. Well on the weekends I have a late start and before I know it, its already 10-11 and I haven't eaten anything. So, this Saturday hubby and I were running errands and I knew that I wanted steak for dinner so I just had a hardboiled egg to get my body going. Then, we got home late for lunch and I didn't want anything too big so I had a cup of grapes and some tuna salad with Triscuits. Then for dinner, I was really proud of myself. I had been craving a steak and while hubby was having a big bone-in ribeye from the local butcher, I made myself a small 6 oz ranch steak with sauteed mushrooms, a small baked potatoe with WW cheese and fat free sour cream and a veggie! For dessert that night I had a Nature Valley granola thin and a sugar free pudding. My daily totals were 26 points and 1,356 calories.
Sunday is usually our cook a huge meal at home day but I stuck to my plan again! I had an egg, english muffin and patty of Turkey sausage for breakfast. For lunch I had a Smart Ones chicken ranchero mini wraps with 1 tbsp. Lite Ranch dressing to dip them in. I also cut up an apple but after a few bites it didn't taste right so I tossed it. For dinner I had a 9 oz. chicken breast bbq'd with 1 1/2 cups of squash, zuchinni and onions that I had sauteed. I know 9 oz. sounds like a big chicken breast..lol..but that is the weight with the bone and skin. It was a yummy dinner! For dessert I had a sugar free pudding and a banana. My daily totals were 27 points and I'm not sure about the calories b/c I don't know how to count the chicken breast with the bone. I was at 973 calories without the chicken and I'll have to work on finding an accurate calorie count for bone-in chicken.
Now, as I said I get off my regular routine on the weekends and that tends to affect my water intake as well. During the week, I have myself on a pretty normal schedule. I drink a bottle of water with my breakfast, another with my lunch, one at home with my afternoon snack and usually 1 or 2 more divided between dinner and dessert putting me at 4-5 per day for about 67-84 oz. per day. On the weekends I'm on the go so much that my meal times are off and I don't usually get in as much water. That's something that I need to work on, making my weekend routine more in line with my weekday routine.
Okay, well that was my weekend for you. I had a good weekend with my family and I stuck to my plan! I'm really proud of that achievement. I'm also proud that this made 1 full week of being back to sticking to the plan instead of on a day off a day like I have been lately. So, YAY ME! I did me this weekend and I did me well!
I'm off for now.. Monday's food info will be posted tomorrow..Have a great day, get a good start to your week and enjoy doing you.
I'll be doing me,
Stacy
